Q about installing Office (or OS) "upgrade version"

It has been some time since I purchased an "upgrade version" of MS software (I usually buy the fulls) and i'm now needing two. Office 2003 upgrade (w/ tech upgrade to office 2007) (I own office 2000 currently) XP Pro FULL (w/tech upgrade to Vista (buisness) ) (this Q will apply to the Vista upgrade) My question is do I have to actually have the "qualifying" previous version INSTALLED before doing the upgrade, or, as I have done years ago with the OS, just have my original disk handy, start directly with the upgrade disk, and when the install "cant find the previous qualifying version" simply put the older disk in let it gyrate and then it goes on its merry way? (like in a fresh HDD install) Secondly, I have seen the various Vista pricing schemes. I know the DVD will have them all on there, and that you can upgrade your version for "some" price. I get a tech guarantee from XP pro to Vista Buisness, but I want Ultimate. So I'm curious if anyone has a clue what the DIFFERENCE would be between the two. Buisness upgrade is $199 and ultimate upgrade is $249 so does that mean I would only have to pay $50 to go from one to the other? Just trying to find out my best course of action considering what I need now, and what I want later.
